THOMAS’ ENGLISH MUFFIN BREAKFAST CASSEROLE

Thomas’ ® Light Multi-Grain English Muffins

INGREDIENTS

6 Thomas’ ® Light Multi-Grain English Muffins
½ tablespoon olive oil
1 sweet onion, finely chopped
1 medium red bell pepper, finely chopped
1 medium green bell pepper, finely chopped
2 cups ham, finely chopped
8  ounces sharp cheddar cheese, shredded
8 large eggs
2 cups whole milk
1 tsp Dijon mustard
¼ teaspoon salt
½ teaspoon pepper

DIRECTIONS

1. Preheat oven to 350° F.

 

2. Spray a 9-by-13-inch baking dish with nonstick spray.

 

3. Slice Thomas’ English Muffins into bite-sized pieces and scatter them in the baking dish.

 

4. In a large skillet, heat olive oil over medium-high heat. Add the onion and bell peppers, and sauté for 5-6 minutes. Set aside.

 

5. Evenly sprinkle ham, onion, peppers and cheese over the English Muffins.

 

6. In a medium bowl, combine eggs, milk, mustard, salt and pepper and whisk thoroughly.

 

7. Pour mixture into the baking dish. Bake for 40 minutes or until set and golden.

 

8. Let cool for 10 minutes before serving.
